My default PDF viewer is Adobe Acrobat Reader. All PDF files show the
proper icon and when I double-click the file it opens up the file in
the proper application. However the icon of the opened file in the
Taskbar is the generic Windows file icon. How do I change this to show
the Adobe Acrobat icon? Interestingly enough, if I just open the Adobe
application the icon is correct.

What you need to do is recreate the shortcut. (At least this worked for me.)
Go to C:\ProgramData\Microsoft\Windows\Start Menu\Programs and find "Adobe Reader X". Rename that to something else. Then create a new short cut to the executable AcroRd32.exe (Mine was in this location "C:\Program Files (x86)\Adobe\Reader 10.0\Reader\AcroRd32.exe") and call the new shortcut "Adobe Reader X". If it works delete the other shortcut and you are set! Good luck!
