Alan Cooper has an excellent analysis of the undo feature in chapter 30 of his book About Face:  The Essentials of User Interface Design.  Also, in the introduction to this book, he states that a major stumbling block to progress in user interface design is a weak taxonomy for the subject.  I get the feeling this issue is partially responsible for the discord  in this thread.
