I need to change the dictionary from English to French in my paragraph styles. Is there a way to change it in all the styles at the same time or do I have to do it one style at a time?

If you used based-on styles, you only have to change the parent style. If not, you can use Find & Change to swap out the dictionary. This will create overrides on your paragraph styles, but you can redefine styles as you go along. A last option would be to use a French character style. The problem with this is that it will remove any previously applied character styles.
