I don't think it would be unreasonable to ask whether the spread should be delivered as one page or two. It doesn't affect how you design, but may affect how you make the PDF. The single most common "beginner's error" in preparing work for professional printing is to seek the best answer without talking to the people doing the production. There are huge variations in how print shops work, and professionals - no matter how much experience - will need to find out details of what is needed so they can deliver the right stuff.
