findfont CERTAINLY supports spaces, if the font was defined with
spaces. If Publisher does what you say, it means that Publisher has a
PostScript interpreter and - crucially - these are limitations of
Publisher.

If you want these EPS files to work with typical pubilishing
applications that process EPS files in the classic way (that is, by
copying code to the printer), font embedding is essential - you cannot
rely on the tricks Publisher does. Do you even know these graphics
programs will run on the same computers - not, for instance,
Macintoshes?

Embedding the OpenType font is a MASSIVE project, probably much larger
than all of the rest of it put together unless you can find/license
code to do it, or have Windows include the font via the printer
driver. You have to convert it to a suitable PostScript font. This
requires detailed knowledge of the OpenType font format and PostScript
fonts.
