Okay, profiling PR. You have to print out the target with unspecified. When you print it out you can choose what ever paper stock you use. From what I've seen if you have chosen unpecified, the charts will be over inked. You can measure these charts and create a profile from them. The quality though will be mediocre as all the dark patches will have little color info in them. Furthermore , the profiler will have to try to bend color in the narrow end of the gamut (darks) and often have large errors. When the original profiles where made they were ink-limiting the driver's media selections.
You're workflow is good. Please note that PressReady uses perceptual regardless of you're intents settings. That's why some people had some questions as to newspaper or matt paper proofing. The Adobe Print Color CP creates a series of CSA's and CRD's and saves those in the system for Postscript color rendering. That's why you wouldn't want to double render profiles into the data stream, by using Postcript Colour Management.
What else. I've created cross rendering profiles to error check the PressReady canned profiles. This is a profile applied in Photoshop in absolute before printing out. That brings you closer to a color proof, yet can have some degradation of the image data after multiple passes thru ICC profiles. IT is possible with certain profilers to save out CRD's but it's probably not worth doing as PR is so nice just the way it is.
