>I'm creating a form that users will download from a client website, fill out and email back to the client. Currently, we own the 5.5 version of Acrobat standard.

Just a note: at version 5 there was no Standard or Professional
version, just Acrobat. I point this out because if you were to upgrade
to a later version, the Standard version has no tools for making
forms, so Standard would be a downgrade.

>When we add a button to submit the PDF by email, a dialog box appears that prompts the user to select how they would like to submit the form. I would like to disable this dialog and just have the script just create a new email in the user's email client application, attach the pdf with the data and send it to an internally specified email address (which should be populated in the To: field of the created email).

The user cannot email a filled in PDF *at all* from the free Reader,
only form data, and this is generally considered too unreliable for
commercial use: submit the form to a web server instead. (Note sure if
Acrobat 8 changes this).
