Auto-block specified text? Any thoughts?

My company uses a version of the reader (I don't know what the specifics are) that reads a customer's fax and will transmit the fax to an employee's computer screen automatically when the fax arrives. Many of these faxes contain some useless information (i.e terms and conditions, greetings etc.), however we still need to find the info we need in them (order information, shipping method preferred). We are only interested in viewing what it is customers want to order as well as a couple other similar specified items.

Is there a version of reader (I'm a newbie, so don't hold me to that program only) that can recognize specified text items on faxed documents and choose to display those items only? We receive about 2000 faxes a day, almost all are different. I want to reduce the amount of time it takes for our people to find the information they are looking for. I am not interested in filtering out junk faxes, just info on all faxes that we dont need.

Foe example, I'd like the software to act as if we had a person physically print each fax, read them, take a black marker, block out the information that we dont need to read, and then allow reader to present the fax.

Any thoughts?
