I don't have a solution, but I also experienced a similar thing. I use a component called Gnostice to export PDF's from Reports in my application. The report had RichText fields with mixed fonts including Symbol fonts used to show greek characters. None of the Symbol fonts are visible in Adobe Reader 8, but using the same file there are there in Adobe Reader 7 and Adobe Acrobat Professional 6.

I've sent in a bug report to Adobe though I'm not 100% certain this is their issue, though everything seems to point to it. I've also emailed Gnostice to get their thoughts. It appears to be a bug to me, unless Adobe changed something in version 8 that handles the symbol font differently.

I'll post back if I hear anything.
