Hi Nathan, 

we do 12 tabloid pages of stock exchange data (full page tables). 
We are currently preprocessing the tables in Excel by VB, and these come fitting exactly in the page layout.  
It's currently vice-versa of what you are trying. 
InDesign is exactly interpreting the width of the column as defined in Excel. The same is true with row height. I can give you the correct conversion factors, but keep in mind that Excel increments in discrete ammounts. 
For row height it goes by 0.25 units, while in column width by 0.14 units. Units of course for Excel is a rather peculiar notion. It refers to "a standard character unit", so we went to cut and try for the correct conversion factors.  
The concept works and is accurate. 
Also you can hyphenate manually in Excel, where you want the text string broken by inserting <CR/LF> in the text stream, so InDesign actually hyphenates by force. 
This is how we bypassed the missing property. Please have a look in a topic that I posted "Setting InDesign defaults" in "InDesign features requested", where I am asking for more table properties defined and the need for changing table defaults. I would like to have your comment.
