Pantone changes from Illustrator to Photoshop

I am fairly new to pantones and have a logo I have created in Illustrator
saved as a CMYK EPS file.

The pantone is solid uncoated and a value of 541U and 76% of 294U

When I save it as an EPS and reopen it again in illustrator all is fine.

When I open it in photoshop it says rasterize generic EPS format and I
select CMYK mode but it looks totally different and when I check the
pantones it has changed them to 542U and 3101U.

Any ideas why this is converting them?
