Oddly enough, I have such a beastie - I used to use an FX-80 (with the optional serial port) on my Mac Plus! Then I got an ImageWriter 15" because the Epson driver wasn't very good, actually. Depending on the model of Mac you have, the probable best solution for you would the the PowerPrint - a somewhat expensive kit which includes a smart serial-to-parallel (or USB-to-parallel for newer Macs) cable and a CD full of suitable drivers for literally thousands of printers. I forget who makes the PowerPrint these days, though.
