?Mounting new Hard Drive

I have just bought an Amiga 3000 with AmigaDOS 3.1(no manuals), 2
Quantum HDs (a 120 & a 105) and would like to install a larger HD.
Could someone tell me how to unmount one of the volumes I have in & how
to mount & format a new one.
Assistance is appreciated.
