Thanks to all those who replied to my question about performance problems with X11 and linux. The problem was that my X server was spending all of its time generating scalable fonts (which uses lots of maths) and wouldn't respond to keyboard or mouse input while generating them. The solution I have (successfully) used for now is to remove the scalable fonts from my font path (in /usr/lib/X11/XF86Config). I'm also buying a 486DX CPU so I get maths on-chip. Another good suggestion was to run a separate font server (xfs), which means that the X server would not be generating the fonts, and hence wouldn't lock up. I haven't yet tried that suggestion.
