You need to go back with the _LINUX_ fdisk command and mark the partition as being Linux and bootable. Weird but true. >P.S. When I run 'startx' it fails telling me I need to create a >config file. Any help on what should be in the config file or even >better how to automatically generate one would also be much appreciated. Argh! No, you need to read through your documentation and come up with your own config file. Since you're asking this question, it's pretty clear you haven't read one bit of the documentation on setting up X. Basically, the X in Linux ships in unconfigured form. It's up to you to configure this file for YOUR specific hardware circumstances. Using someone else's configuration can cause great physical damage to your system. Again, READ THE DOCUMENTATION.
