Well, like the God Hypothesis, the Infinity Hypothesis is Not Proven.
  And Science is concerned with Empirical Fact, after all.
  Even the Origin of the Universe is only an assumption - our universe 
appears to be expanding, hence there must have been a Big Bang, to start it 
all.
  A Finite series of things can be demonstrated; hence, let's have an 
In-finite series.
  OK, trot one out!
  All things seem Temporal; hence let's have something which is Eternal!
  Again, where's the evidence?
  Gods and goddesses have historic origins; hence there must be a cosmic 
"God"!
  Strange, He never appears, performs no Acts (nowadays), while if things go 
bad, it's a case of "God's Will be done", or, if good, then, "the Lord be 
praised!".
  So, while much of Mathematics can seem Mystical, let's not assume it 
proves much about the mundane world of sense perception.  Maths measures, 
and that's about it.
  Even the Scientific Method took years to (re-)establish, after resistance 
by Dogmatic Faiths, and we Mad Apes are now back to what Other Species knew 
all along - we learn from Experience.

  PS: The Theory of Biological Evolution?
        Yes, the admission that "it's only a theory" is seized upon by 
detractors as evidence of uncertainty, yet for anything, in Science, to 
become an Hypothesis, let alone a Theory, requires years of work and a 
multitude of facts, to substantiate.  A Law is even harder.
        As for AGW (Anthropogenic Global Warming); again this is an 
Hypothesis or Theory, but the accumulated data should be disregarded at our 
peril.  The assumption might just be true.
