The roms used with MESS will work with the Vavasour emulator if you make 
a few small changes. 1) MESS (except for the Coco3) uses separate roms 
for Basic and Extended Basic. They are combined together for Vavasour. 
2) Each rom used with Vavasour needs two bytes added to the beginning of 
the rom. These bytes are in Intel order and indicate the load address 
for the rom. So the coco.rom will start with $0080, meaning that it 
loads at $8000. It should extend through $BFFF. The disk.rom will start 
with $00C0; loads at $C000.

Any PC program that can read the roms as raw data (not text) can alter 
the files as needed.

You can also copy them from a real Coco.
