All I know is that you need to call capGetVideoFormat() to know the actual
format of the image that is returned in the VIDEOHDR structure.  The
BITMAPINFO structure you pass to capGetVideoFormat() will be filled in with
information telling you the formatting of the bitmap contained in the
VIDEOHDR.  The image itself will be in either YUV or RGB format, depending
on the settings of the capture.

Asside from that, there's not much in the way of public documentation when
it comes to working with VIDEOHDR that I can find.
