Just use one of the com implementations for java. Most of them come with
working examples to access outlook, access, excel and so on.

E.g.:
http://danadler.com/jacob/
http://www.intrinsyc.com/products/enterprise_applications.asp
..
Best regards,

Carsten has already pointed to ActiveX/COM libraries. They are the most
generic means for accessing other (Windows) applications. If you have
specific applications you intend to work with, dedicated solutions may
be easier to work with.

For Star Office there is a dedicated SDK that provides Java support (see
www.openoffice.org) that should also be platform independent. I have
only read about it, no idea how well it actually works.

A German Company offers (Open Source) software for accessing Microsoft
Word (http://www.java400.de/default.html?Javactp.htm). Again, all the
information I have is from their web site, but not backed by personal
experience with using the software.

We have used Jacob for accessing the XML editor XMetaL (that now also
has direct Java support) without encountering any problems.
