The bookie doesn't make the haul, the "family" he's working for does,
and the controlling members of any "family" around these parts live in
the burbs -- melrose park comes to mind as one favorite living place.
The bookies themselves don't make a hell of a lot of money.

However, if I turn your point a bit, it becomes a little more valid in
that the casino owners will probably make more money than all the bookies
combined and the casinos will have more money coming in than the bookies'
establishments -- I'll agree with that.
