Why is that so many so-called Christian educators, including the pastors
consider it fair game to lie to their flocks about evolution? Are they
just willfully uninformed, or do they do it deliberately?

The fossil records for a given species may, or may not be, complete -
but enough complete fossil records exist for enough species to prove
that evolution exists and is at work all of the time.

Item: "EVOLUTION OF MODERN CATS (SUMMARY)"
From: http://www.messybeast.com/cat-prehistory.htm

Carnivorous mammals evolved from Miacids small pine marten-like
insectivores that lived 60 million - 55 million years ago. The miacids
split into two lines: Miacidae and Viverravidae. Miacidae gave rise to
Arctoidea/Canoidea group (bears and dogs) while Viverravidae gave rise
to Aeluroidea/Feloidea group (cats, hyenas, civets, mongooses) around 48
million years ago. The Viverravidae also gave rise to a group called
Nimravidae. The Nimravids were cat-like creatures that evolved in
parallel with true cats; they are not part of true cat lineage and have
left no living descendents."

Google on the word miacid for more.

Item: Whales
From: http://darla.neoucom.edu/DEPTS/ANAT/Whale.html
	http://darla.neoucom.edu/DEPTS/ANAT/Ambulocet.html

"Modern whales are fully aquatic mammals, i.e. they cannot live outside
of water. Like other mammals they breathe air, give birth to live young
that they nurse, and have hair in early stages of their development.
Scientists usually use the word "whale" as a synonym for the order
Cetacea, which includes dolphins and porpoises as well as whales. Modern
cetaceans can be divided into two groups: mysticetes, or baleen whales,
and odontocetes, or toothed whales (the group that includes sperm
whales, dolphins, and porpoises). Cetaceans arose in the Eocene,
approximately 50 million years ago and became fully aquatic in a few
million years. Whale origins are well known from fossils. They document
the transition from land to water and tell one of the most exciting
stories in evolution."

Go look up that second link for Ambulocetidae - or google on Ambulocetidae.
