Is there a way of inserting the DAY into an Excel spreadsheet together
with the full date?

eg.  Wednesday, 24 July, 1996

Fistly type <CTRL> + ;   this puts today's date in the cell
then go to Format Cell, select the number tag, go down to date format.

type in the code box "dddd dd/mm/yy"
