For what it's worth, Learning Group International (aka "the learning
tree") offers a course titled "Introduction to Fiber Optic
Communications". The course content lists topics referring to "cables and
installation techniques" and "FDDI and LANS". 
Four day course, List Price $1895.
I do not have personal experience with the course.
