Mac --> eps --> PS printer on unix: Whither fonts?

I am using mac applications such as Canvas 3.0 to create EPS
files from mac PICT files. If these PICT files contain fonts
that I have in my system (say just bitmap, for example) are
the font definitions somehow included in the postscript?

I tend to think not, since I have a terrible time trying to get
esoteric fonts printed on the unix printer. Is there a way I
can somehow include the font definition information in the
eps files?

Thanks in advance,
Rob
