Been following this thread with some interest.
I have a baseline you can use. My book ``PostScript by Example'' was
formatted using the TROFF stable of preprocessors and postprocessors.
The manuscript is 648 pages long including eight pages of color plates.
The process of building the book includes:
o PostScript figure inclusion (761 PostScript figures),
o Cross references to the chapter, section, subsection, and
page level (361 references -- two passes required),
o line drawings a la PIC (hardly any),
o tables a la TBL (few),
    o equations a la EQN (about 80),
    o format a la TROFF,
o plus tables of contents postprocessing,
o plus index postprocessing (1038 index entries).
The entire book is laid up from raw source to printer-ready PostScript
in eleven minutes on a NeXT Station. The document prints in around
five hours on a LaserWriter IIg with eight MB RAM. It prints
somewhat faster (maybe around three hours) on a NeXT Station with
a NeXT printer (serial transmission time is significant).

Maybe some time later I'll write some thoughts on the kinds of things a
document production system needs to be able to do.
