You're completely free to use a domain name without registering
it - so long as you don't expect the rest of the Internet to be able
to find you.
If your own DNS server has the information for your unregistered
domain, then your own local queries will be satisfied by your own
local DNS server. Everything will work for you.
But let's say you call yourself foo.bar.com and don't register it.
If someone elsewhere in the world wants to contact foo.bar.com,
their query will generally go to a root nameserver (run by the
folks who handle registrations). If someone else has already
registered bar.com, then it's _their_ DNS information which will
be returned, and they will get your mail, your WWW traffic, etc.
If nobody else has registered bar.com, then the root nameserver
will simply say that there's no such domain, and _nobody_ will get
your mail, your WWW traffic, etc.
