Software to capture printer port input wanted.

I need a bit of [MS-DOS] software, that emulates the handshaking of a
parallel printer on a bi-directional parallel port and logs the
incoming data to a file.

I need to reprocess a large amount of data that is normally sent to an
EPSON printer. The generating software runs on a dedicated PC and uses
a real-time DOS extention that precludes the use of DOS or BIOS
facilities for printing, therefore it uses the hardware directly and
ordinary redirection facilities fail.

While most of the older parallel interfaces only sport bi-directional
status lines, most notebooks etc. have bi-directional data lines as
well, so in my [uneducated] opinion such a piece of software should be
feasable and none too difficult to do. 

Before I invest any of my own time, I'd like to ask you all, whether a
tool like that is already around (preferably in source).
