It looks like I did the same thing.  And it caused me serious
nightmares.  And I was almost certain (and wrong!) that I'd
re-downloaded my form fresh before trying with the Adobe Readers.
(I've got v7, v8 and v9 all on my machine now).

Preview mangles the things when you do a Save As from it.  Loss of
almost all data (one field stayed filled!  Really weird) and the
security settings for the PDFs get messed up for future use in
other programs.

Damn you, Preview!

That lesson caused me a LOT of grief.
