And the summary is... this is a known 5.0 bug. Fixes are the 5.0a
updater or the 5.1 upgrade. The 5.0a update is supposedly available at
sumex or michigan, and from Microsoft (I haven't verified these; I'm
ordering the 5.1 upgrade).
This might also happen if you open files after changing the overall default,
but that wasn't my problem; it was changing the font in a document and
having Word helpfully change it back to the default...
Thanks to the following for answering:

Sigma Ed <eyee@undergrad.math.uwaterloo.ca>
Tom Kent <kent@centauri.dmc.com> adds that moving Word files between
machines with different systems or pref files can cause font problems:
"The Word 5.0a updater corrects this problem; so does Word 5.1. If you
solve the problem with 5.1, make sure you get the 5.1a patcher, which
corrects a bug in saving files with headers and footers. Jeez, Microsoft,
get with the program..."

Thank you all. For what I do, Word is (usually) fast, powerful, and
relatively bug-free, so I intend to stick with it.
