As far as I can see, it works like this:
1) If Edit.app is not in "Developer Mode" you don't get anything at all
   (I'm still wondering whether there are actually people satisfied with
    the so called "User Mode").
   So: Set your Edit to "Developer Mode" in Preferences and Quit and Restart.
2) Edit will complete any STRING on typing <Escape> if...
   ... there is a key in the "Expansion Dictionary" beginning with the STRING.
	In this case the expansion is taken from the "Expansion Dictionary".
	This may be anything from a single ' ' to several meg.s of text ;-).
   ... you are in CFileText-Mode ("-C-" in the titlebar of the window) and
	there exists a word above your current position in the file beginning
	with the STRING. Edit now reacts as if every word above the current
	position in the file were in the "Expansion Dictionary" expanding
	to itself.
	I don't know what's happening if the window is "LispFileText".

3) If Edit presents the completion as a selected range there is more than
   one possible completion and you can 'scroll' through the other choices by
   typing <Escape> again and again and again ... till you get tired, the
   Esc-key breaks or power fails---whichever happens to be first :-)

4) Please be so kind and rtfm before you cry out
	'NEW *UNDOCUMENTED* FEATURE IN 3.0---WHY HASN'T ANYONE TOLD ME??'
   and it's all over the (online) documentation :-/
   Reading the "Developer Release Notes" has been a very good starter for me.
