In 3.0 there is the same default value MailFilter
If its not set, its value is
Received:From :Status:Message-Id:Return-Path:Next-Reference
( from "strings /NextApps/Mail.app/Mail" )
so you can type in your shell

dwrite Mail MailFilter "Received:From :Status:Message-Id:Return-Path:Next-Reference:To:"

to prevent to show the "To:" field.
