Except the fact that it takes over a minute to get about 5 half
decent extensions and the desktop to finally arrive on your screen.
I'm using System 7.5 on my '030 IIci and it takes up more of my valuable
memory than System 7.1 did. VM? Not quite. I'm not that daring.
I can time my IIfx right now and I will guarantee with 8 extensions
(minor ones, actually) it will take at least a minute to land me into
the desktop. 7.5.1, of course.

Not quite. My *25*MHz 68030 IIci wouldn't. Even with all those
accelerators (hardware and software plus FPU) I've installed.
