If you have to fill out forms or use carbon, then you can use a dot matrix 
printer, but dump the data through the printer as ASCII instead of 
formatting it with Quickdraw.  The internal buffer of the printer is then 
ample to handle your data, and the Mac is instantly freed up for work.

That's what I used to do.  (BTW, using "draft" mode with the Imagewriter 
drivers achieved this).
