I recently published a book which you may want to add to your list: "Numerical Software Tools in C" by James Kempf, Prentice-Hall, 1987 It is definitely in the realm of "programmer conversion", since its intent is to convert FORTRAN programmers to using C. It discusses how to program numerical applications using C, and stresses the software engineering aspects rather than the algorithmic aspects. Particular emphasis is on reusing existing software, and interfacing with FORTRAN libraries, like IMSL, is discussed. There is also a chapter on graphics, but at a very basic level.
