Depends on the type of Nubus card, you might need a driver.
But usually it should work out of the box.

Yes.

- You have to choose one card in you AppleTalk and TCP/IP settings
  on the Mac side.

- Then you can choose the other card in the MacIvory
  control panel under "Ethernet Setup":
  "Use an Ethernet Interface" and then you select the slot.

- On the Genera side you have to follow the usual instructions
  to have TCP/IP and/or CHAOS addresses.
