I can't find it explicitly mentioned either, if it was anywhere I'd
expect it to be in 822 'cos it's not an SMTP issue anyway.

Yep, sendmail does the conversion here, so all incoming/outgoing mail
with a From at the start of a line gets the ">" prepended. As far
as mailreaders are concerned surely they should do the conversion.

As long as the recipients collection of mail/mailreader can handle
it, then it shouldn't be. And IMO any collection system that is
going to deliver mail which is to be read by a mailreader that
uses "From " as the message separator should handle it. It
shouldn't matter whether the sending system prepends the ">" or
not.
