Executive summary (for ppint, or anyone else wondering): it seems that
you *can't* move the catch-all mail away from the privileged initial
administrator account, even if you want to.

Details, for anyone who may be interested:

It appears that the initial user account that is already set up for you
is the special bit: my tests show that mail to unknown addresses always
gets sent to that account's mailbox, regardless of whether the
administrator@ address is (a) associated with it, (b) associated with
another account, or (c) not associated with anything.

This initial user account is clearly different from any others that you
might set up, because it doesn't have the checkbox to say whether it has
admin rights (it always has them), and it can't be deleted (it doesn't
have a "delete" button, even if you log in as a different
admin-privileged user, although a different admin user *can* mark it as
inactive).

Demon's Email Management Portal Guide is thus shown to be not just
confusing with regard to "administrator", but also significantly
incorrect.  No surprise there, then.
