Intenta con
gcc -Wall `gtk-config --cflags` `gtk-config --libs` ejemplo.c -o ejemplo

Con acentos invertidos y -- en vez de -.
Si sigue sin funcionar verifica que tienes bien instaladas las GTK.
Prueba con 
 $ gtk-config
a ver qu� te dice... A lo mejor no lo tienes en el path.
