Solo necesitas compilar el kernel y los modulos, y poner una entrada en 
lilo o en grub, para que al arrancar puedas seleccionar el que mas te 
interese. Te paso los parametros de mi /boot/grub/grub.conf:

default=0
timeout=10
splashimage=(hd0,0)/grub/splash.xpm.gz

title Red Hat Linux (2.4.20-19.8)
         root (hd0,0)
         kernel /vmlinuz-2.4.20-19.8 ro root=LABEL=/ vga=0x314
         initrd /initrd-2.4.20-19.8.img
title Red Hat Linux (2.4.20-18.8)
         root (hd0,0)
         kernel /vmlinuz-2.4.20-18.8 ro root=LABEL=/ vga=0x314
         initrd /initrd-2.4.20-18.8.img
title Red Hat Linux (2.5.66)
         root (hd0,0)
         kernel /vmlinuz-2.5.66 ro root=LABEL=/ vga=0x314
         initrd /initrd-2.5.66.img
