Why built-in functions?

I thought that the gcc built-in functions were functions that the
compiler included code for, perhaps in the compiler itself, perhaps
libgcc.a. However, today I tried compiling a test program that used memcpy
and looking at the object file produced; yup, memcpy was listed as an
undefined symbol. Then I looked at libgcc.a, and couldn't find memcpy
there.
So, what purpose do the gcc built-in functions serve? Are they only
there so you don't have to include certain header files?
