In 2001 the American Association of Clinical >> Endocrinologists recommended changing the standards for normal thyroid >> levels because millions of Americans with normal levels were suffering >> the effects of low thyroid levels. In other words, being overweight >> wasn't the only norm in America; so were insufficient thyroid levels. Additionally, feeding oils produces oily, soft fat which gets knocked down in price when they're sold for meat. At present, farmers look for a long bodied pig with minimum cover fat. They've developed breeds of pigs from the Landrace breed that are consistent in producing a low fat carcass. Just the other day the news had a report that of skinless chicken breast, a pork chop and a filet mignon, the pork chop had the lowest fat content. The customer demands a low fat product, so that's what they produce. It's a totally different looking animal (ok...so not totally, but still _very_)from the hog of the early 1900s and even the preferred breed of the 1950s (the duroc). SueK
