You really have not been to a meat processing plant recently have you.
The HACCP controls put into place were to stop the chicken seafood and
beef industries in the USA killing almost as many people as auto
accidents on an annual basis. I would rather have a pig I saw hung an
butchered in the village square on an island in Greece than the what
goes on in USA abattoirs.

BTW, it is all about how the meat is raised when it comes to taste and
texture.
