Moray Eel Diet

I have a question concerning the feeding of my Starflake Moray.
Is it all right to keep him on a diet of exclusivly goldfish?
I've had him over a year and he has grown from 3" to 12". I give
him one 1" - 2" goldfish a day. About two times a month he will
not eat for about 3-4 days. When he does eat, he eagerly accepts
 the goldfish from my hand.
My reason for concern is that he seems to have stopped growing.
I have not noticed any growth for the last 2 months. Also he hides
a lot more than he used to. Usually he would prowl the tank starting
about 8:00pm (1 hour before 'lights out'). Now I only see him at
 feeding time.
Water conditions have been stable. The tank is a 30 gallon. He is
the only 'fish' in the tank.
Any comments or suggestions would be greatfully accepted.
