Actually, image synthesis is most commonly used to describe modelling and
rendering of 3D graphics, and does not come under what's usually referred
to as image processing.  The IEEE has a book on Image Synthesis.  I believe
it's edited by Nelson Max.  It's a collection of papers on various topics of
image synthesis, and might be a good place to start.
