The best text books that introduce MM are:

Image Analysis and Mathematical Morphology by Jean Serra, 1982
Academic Press ISBN 0-12-637240-3.

Image Analysis and Mathematical Morphology, Vol 2, by Jean Serra,
1988, Academic Press, London

A good series of theoretical and applied articles appear in:

Computer Vision, Graphics, and Image Processing, Vol 35, 1986,
Academic Press

The "Introduction to MM" by Jean Serra in this series is very
good. Also, "Grayscale Morphology" by Stanley R. Sternberg is
very good.
