You cannot get a "copyfitting readout" (I assume you mean the field that turns green/blue/red in InCopy indicating overset/undersets) in multiple layouts unless you open all those multiple layouts at once in InCopy and flip through them as you work on the story.

All these layouts will link to the same InCopy file so when you check one out, you'll see the same story is checked out to you in each layout. Since it's one InCopy file, by definition each layout will contain the same exact text and formatting for that story. The only copyfitting possible in this scenario is to identify the layout with the least amount of space to show that text. Work on that layout and edit the text to fit.

All the other layouts linking to that story will update (or prompt you to update) that story to show that relatively small amount of text. You may have some layouts with a lot of white space. You can change the frame's dimensions or insets or reposition the frame to make it look better. But if you try to "fill out" the space with more text, or you increase the leading or typesize, you'll end up with overset text again in the layout with the least amount of space to hold the text.

Remember that the formatting of the text, as well as the text itself, is contained in the InCopy file. The amount of space it has in the layout (the frame dimensions and other settings) is not ... that's in the InDesign file.

Does this help?
