One important setting in your properties for any PS printer is TrueType Font: Download as Soft Font (don't use "Substitute with Device Font"). Regarding Symbol, make sure you have the TrueType version installed, even if you're using the Type 1 as well. They can coexist just fine, but you must have the TrueType. My personal substitution table is entirely "don't substitute".
