Ok, suspecting it was the Updater Plug-in causing the problems, I removed it from the application package (Adobe Reader/Contents/Plug-ins/Updater.acroplugin) . I just moved that folder out of the app and put in on the desktop. Now Adobe Reader 8 works fine. This is definitely the cause of my crash. I checked the About Adobe Plug-ins and I can see all the other 22 plug-ins have been loaded (was 23 originally with Updater.acroplugin). So..I hope someone from Adobe is reading this thread!
