Let's assume for a moment you hate the UAC and so it is disabled:

Choice 1: Enable it, install Adobe Reader 8 and disable it. This apparently works per the aforementioned statements, I have yet to verify this.

Choice 2: Run your downloaded executable, go to your "C:\Users\<USERNAME>\AppData\LocalLow\Netopsystems" directory and run the "AcroRead.msi" file. This will allow you to install it, bypassing the default installer.

Note: Vista is NOT BETA. It is RTM'd meaning it is completed and GOLD. Adobe not supporting this only shows apparent incompetence among staff, which is to be expected from rep to rep, but I doubt they'll agree.
