How to create fill in pdf forms

I would like to scan a document, say a application form, and be able to fill it out with the computer, and then print it . I do not have to save it , just be able to scan the form, and then be able to add text, such as name, address...ect. I have adobe 7 and can scan my doc as a pfd file but what do i do then.
